We began this series with a yam dish, vegetable yam pottage. That was over six months ago. The yam has featured prominently in the other recipes that followed. One of the reasons for that is the importance of yams in the West African diet. In the current recipe, we return to the yam once more to bring you the recipe for a nourishing desert, Yam Pudding.

Yam Pudding

This is a simple and easy dish to prepare. You start with two or three slices of boiled yam, enough to make a measuring cup of mash. This recipe will make a healthy serving for six people.

    Ingredients
      (1) cooked yam mashed - 1 cup
      (2) magarine - 1/4 cup
      (3) sugar - 1/8 cup
      (4) orange marmalade - 1/8 cup
      (5) ground ginger - 1/2 teaspoon (optional)
      (6) egg - 1 fresh (whole)
      (7) milk - 1/2 cup
      (8) Orange essence or grated rind - 1/2 orange
      (9) salt - a pinch

    Preparation
  • Blend or cream margarine and sugar until soft and white.
  • Add egg and beat well.
  • Sieve in the mashed yam and ground ginger.
  • Add few drops of orange essence or grated rind and marmalade.
  • Add milk and mix, whisk to a soft dropping consistency.
  • Put mixture in greased pie dish and bake in moderate oven for about half an hour.
  • Serves six.
